crispy fried milk ~ highly recommended 椰香脆皮牛奶 ~ 强推 – Victoria Bakes

superbly good.. i love the saltiness and crunchiness on the outside,
and the sweetness and tenderness in the inside
i believe the kids will go ga-ga over this

ingredients

dough
250ml milk
50ml coconut milk
40g sugar
40g potato starch (corn starch ok)
1/2 tsp baking powder

batter
60ml milk
20ml coconut milk
2g salt
5-6 tbsp cake flour

additional potato starch, as appropriate (corn starch ok)

食材

面团
牛奶 250毫升
椰浆 50毫升
糖 40克
土豆淀粉 40克(粟粉 OK)
泡打粉 半小匙

面糊
牛奶 60毫升
椰浆 20毫升
盐 2克
蛋糕粉 5-6大匙

土豆淀粉,适量 (粟粉 OK)

Directions/做法

mix all dough ingredients in a saucepan together over medium heat
stir constantly
面团食材混合于锅中,拌匀并以中火加热、不停搅拌

continuing stirring till mixture comes into a soft dough like the above
turn off heat
搅拌至食材浓稠并成软面团(见上图)
熄火

in a greased pan/tupperware (i used a 6 inch square pan), spread dough evenly
if using a 6 inch pan, i suggest you spread to fill half the pan
cool completely, then freeze for 1 hour
(my kitchen got a little messy after this, so i stopped taking pictures… apologies)
将面团勺入抹上油的烤盘或保鲜盒(我用了 6寸方形烤盘)。面团铺平
入用 6寸烤盘,我建议将面团铺上半份烤盘
待完全冷却后冷冻 1小时
(此步后,我的小天地就被我搞得乱、乱、乱。。。。所以也没在往下拍)

– mix all batter ingredients together and whisk till no longer lumpy. the consistency of the batter should be thick and oozy, so add as appropriate
面糊食材混合,搅拌至无颗粒。面糊应该偏浓稠,比蜂蜜在浓稠一些些,所以蛋糕粉适量加入

– remove dough from freezer, and slice into equal sizes
面团从冷冻库取出、切成等份

– coat each portion of dough lightly with potato starch, then dip it into the batter
将面团裹上薄薄一层土豆淀粉,然后裹上面糊

– heat a pot of oil over medium heat, and fry the dough till golden brown. note: after dropping the dough into the oil, try to give it a stir to prevent them from sticking to the bottom of the pot and together
将一锅油以中火烧热,摆入面团炸至金黄色。注:放入面团后,尽快搅拌数下以避免面团粘锅或粘在一起

– dish out, drain on towel and serve immediately!
炸好后沥干油份即可享用!
