S: Hi, Jane, I will invite a VIP customerto have a dinner in a famous sea food restaurant, can you tell me something about the table etiquette?


J: No problem, have you prepared everything for the dinner? And do you know how to behave in front of a table?


S: Wow, I have reserved a table in the restaurant, but I am not familiar with table manners. I learned that you have once been trained on that, so I come to you for help.


J: Yes, there are some table manners. First, when you sit down on the chair, remember to place the napkin on your lap, or your waiter can do it for you.


S: OK, after that, what should I do?


J: Then, look at the table in front of you,you will find some plates and knives. The small plate on your left is your bread plate. Upon it is a butter knife. Restaurants usually serve some bread and butter, or bread sticks and dip, while you are waiting for the starter to arrive. The waiter will take this plate away once you finished with it.


S: What’s a starter?


J: It’s an appetizer.


S: Well, then how can I use these plates and knives?


J: No matter how many sets of cutlery are alongside your plate, begin with the outside one and work your way towards your plate.


S: I get it.


J: You will have some spoons. Remember a dessert spoon is oval, and a soup spoon is rounded. The waiter will put the round spoon to your right and the oval spoon on your plate, which is for your dessert.


S: OK.


J: Usually, any cutlery including knives, forks and spoons above your plate is for your dessert.


S: I have decided to order fish as main course. This restaurant is well-known for its seafood.


J: So, you need to recognize a fish fork,which has shorter tines than a normal fork, and a fish knife is not serrated.It is more like a butter spreader, but with a sharper edge.


S: OK, I will hold a fish fork on my left hand and a fish knife on right.


J: When you are eating the fish, you can have some wine. Since your main course is fish, the restaurant will recommend some white wine. The white wine glass is a bit longer but thinner than a red wine glass. 


S: But I will order some fruit juice. What glass should I use?


J: Don’t worry about it, the restaurant will use their unique glass to hold fruit juice.


S: So, if I finish eating, will the waiter come to serve me?


J: You just need to place the cutlery parallel, and close to each other; and this signifies that the waiter can take it away.


S: What if the waiter is far from us or he is serving other tables?


J: Generally, a waiter won’t be too far. But if your waiter is not within your sight, you could ask other waiters to come to serve you.


S: Wow, I learned so much. Now can I invite you to rehearse this procedure so that I can be more familiar with it?


J: Why not?
