This egg is NOT a hundred years old, despite what American TV presenters would have you believe. The prefixed word ‘century’, in the name century egg, is merely there to indicate to you the amount of time that will pass before any sane person would summon up the courage to attempt eating one of these things again. The century egg has long been used as a form of torture on reality TV shows; it has cost many a Survivor tribe member the immunity idol, and has singlehandedly stopped everyone from stuntmen to army generals in their pursuit of the $50,000 prize money offered on Fear Factor.

The reality is that the century egg starts life out as a normal chicken or duck egg that is placed in potash and left to ‘cure’ for about a week. The term ‘cure’ makes one wonder if that’s a hint they give so you know what the first thing is that you should seek out after consuming this delicacy.

My Review of the Century Egg

Honestly, I love century egg. It tastes far better than a hard-boiled egg (something I usually dislike) and it has no foul odor at all. It actually smells a lot less offensive than eggs normally do. The taste is soft and quite neutral (like egg yolk, just creamier), but it is a bit sticky and can make your teeth look green if you don’t have the sensibility to flush it down with—as per my recommendation—some alcoholic beverage.

Ingredients  配料

  • ¾ cup white rice 3/4杯米

  • 4 ounces pork shoulder, julienned 4盎司猪肩肉,切丝

  • ½ teaspoon cornstarch 1/2茶匙玉米淀粉

  • 1 teaspoon oyster sauce 1茶匙蚝油

  • 1 teaspoon vegetable oil 1茶匙植物油

  • 7 cups water or chicken broth 7杯水或鸡汤

  • 2 thousand-year-eggs 2个松花蛋

  • 3 slices ginger 3片姜

  • ¼ teaspoon ground white pepper 1/4茶匙白胡椒粉

  • Salt to taste 盐适量

  • Chopped scallion and cilantro, to garnish 葱末和香菜末,装饰用

Instructions 步骤

  1. Wash the rice, drain, and transfer to a ziplock bag or freezer-safe container. Leave it in the freezer for at least 8 hours.  大米淘洗,沥干,放进密封袋或冷藏盒中。然后放进冰箱至少8小时。

  2. Marinate the pork with the cornstarch, oyster sauce, and vegetable oil for about 15 to 20 minutes.  用玉米淀粉、蚝油和植物油将猪肉腌15到20分钟。

  3. In a medium pot, bring 7 cups of water to a boil. Add the frozen rice (no need to defrost) and bring it to a boil again, stirring the rice to prevent sticking. Reduce the heat to a low simmer, and cover and cook for about 15 minutes. Periodically check and stir the congee. It’s important to stir from the bottom to prevent sticking, as the rice texture thickens quickly.  在一个中等大小的锅里,煮7杯水。加入冷冻大米(不需要解冻),再次煮沸,搅拌大米以防粘锅。把火调低至慢火,盖上盖子煮15分钟左右。定时查看并搅拌粥,从底部搅拌以防止粘锅,因为大米的质地会很快变厚。

  4. While that’s cooking, dice the thousand year egg and set it aside. Very thinly julienne the ginger. Don’t prepare this ahead of time, as we want the flavor of freshly cut ginger.  在烹饪的时候,把松花蛋切成丁放在一边。很薄的姜片。不要提前准备,因为我们想要新鲜切姜的味道。

  5. After 15 minutes, it’s time to add the julienned ginger, pork, and thousand-year egg. Stir and simmer for another 5 minutes or so. Finally, stir in the white pepper and salt to taste. Serve piping hot with chopped scallions and cilantro.  15分钟后,加入姜汁、猪肉和送花蛋,搅拌,再煮5分钟左右。最后,加入白胡椒和盐调味。粥要趁热喝,把切碎的葱和香菜叶撒上就可以开喝了。
