巧克力闪电泡芙

巧克力泡芙(30克/个泡芙)
150克 全脂牛奶
150克 水
18克 转化糖浆
6克 盐
132克 无盐黄油
168克 中筋面粉
12克 可可粉(嘉利宝Callebaut)

制作
1、厚底平底锅内把牛奶、水、转化糖浆、盐和黄油煮沸。加入混合过筛的面粉和可可粉,搅拌至面糊呈锅底“薄膜状”。
2、把面团移至桌上搅拌机的搅拌缸内,分次加入全蛋搅拌。
3、用装有18号花嘴【18 nozzle (for petit fours)】的裱花袋在铺垫了烘焙垫的烤盘上挤成长条(注意挤的速度要保护稳定避免断裂),冷冻。取出冻结的长条泡芙,切割成12厘米长的小长条形。
巧克力泡芙酥皮(10克/个 泡芙)
150克 无盐黄油
150克 中筋面粉
37克 可可粉(嘉利宝Callebaut)
187克 红糖(黄砂糖brown sugar)
制作
1、全部材料放入厨师机搅拌缸内用扁桨(paddle attachment)搅拌。
2、把230克放在两张硅胶烤垫之间(用压片机或擀面杖)擀压为1.75mm厚度,冷冻。冻结后取出裁切成3cm×12.5cm的长条,放在冷冻切长条的泡芙上。
3、以180℃烘烤20分钟,然后打开风扇再以170℃烘干8分钟。
焦糖奶油(30克/个泡芙)
84克 葡萄糖浆(#1)
76克 砂糖
200克 淡奶油(乳脂含量35%)
40克 葡萄糖浆(#2)
2克 海盐
72克 全脂牛奶(A)
72克 可可粉(秘鲁深色人工可可粉或Callebaut)
56克 无盐黄油
120克 全脂牛奶(B)
制作
1、葡萄糖浆(#1)与砂糖煮至190℃成焦糖。加入提前混合煮沸的淡奶油、牛奶(A)和葡萄糖浆(#2),再继续煮至105℃,然后降温至70℃。
2、加入(秘鲁)可可粉、黄油和海盐搅拌,然后加入牛奶(B)搅拌均质过滤。
可可香缇奶油(13克/个泡芙)
100克 淡奶油(乳脂含量35%)
5克 砂糖
22克 可可豆碎(Callebaut cocoa nibs)
制作
1、厚底平底锅内加热淡奶油、砂糖和可可豆碎至60℃。
2、用均质机充分搅拌后静置闷泡3小时后过滤。
3、打发后每个泡芙注入20克。
黑色闪电淋面

78克 吉利丁冻(11吉利丁粉+67克水)
制作
1、吉利丁粉(200bloom)溶于水制成吉利丁冻,静置待用。
2、平底锅把牛奶、淡奶油、葡萄糖浆和砂糖(#1)混合加热,然后分次加入混合的玉米淀粉、可可粉和砂糖(#2)。
3、煮沸2分钟,然后降温至40℃,加入融化的吉利丁冻,搅拌均质乳化过滤。
※ 此淋面仅为诸多闪电淋面的其中一种,对淋面酱的温度及状态控制要求较高,操作时要谨慎避免流淌滴落,其它效果更佳的淋面亦可替换使用。
巧克力金丝薄脆片(表面装饰)
312克 水
30克 无盐黄油
52克 糖粉
16克 T55面粉
4克 玉米淀粉
20克 可可粉(嘉利宝Callebaut)
70克 蛋白
2克 细海盐
6克 可可豆碎(Callebaut cocoa nibs)
制作
1、水和黄油在平底锅内煮沸。加入混合拌匀的糖粉、可可粉、面粉、淀粉和蛋白搅拌。
2、取用350克铺放在40x60cm的烤盘上,每盘撒上6克可可碎。
3、放入170℃风炉中烘烤4分钟,然后撒上干细海盐再继续烘烤10分钟完成。
4、敲成小片后再次以低温40℃烘整型。
组装完成
烘烤完成并降温至室温的闪电泡芙底部打孔(4个孔)注入可可香缇奶油和焦糖奶油。
让泡芙覆盖酥皮的一面在温度32~35℃的镜面淋面上浸沾表面1/3,确保无气泡,提起后用手指擦拭整齐边缘。
装饰以整型的金丝薄脆片和食用金箔纸。

method
In a saucepan, boil the milk, water, trimoline, salt, and butter. Add the flour mixture and cocoa powder by sieving together. Mix on the stove until dry.
In a mixing bowl, gradually add the eggs.
Using a no.18 tip (petits fours), pipe strips on a lined baking sheet (do not refine the piping otherwise they will collapse). Freeze and then cut into 12cm long éclairs with a large knife.
Chocolate Crumble
10g per piece

150g unsalted butter
150g plain flour
37g cocoa powder (Callebaut)
187g brown sugar
Method
Mix all ingredients together。
in the on a baking tray, but do not over-mix. Separate the dough into 230g portions then roll out over two baking sheets (1.3/4) using a rolling pin. Freeze, then cut strips (3cm x 12.5cm) to make the éclairs (chocolate choux pastry).
Cook the éclairs with the crumble at 180°C in the oven for 20 minutes, then dry them out by using the convection oven setting at 170°C for 8 minutes.
Creamy Peruvian caramel

84g glucose (#1)
76g sugar
200g cream (35% Bulla Pure )
40g glucose (#2)
2g sea salt
72g milk (A)
72g cocoa powder(from Peru or Callebaut)
56g unsalted butter
120gmilk (B)
Method
Caramelise the glucose(#1) and sugar at 190°C/375°F. Deglaze the pan with the cream, milk (A) and glucose(#2), which have been boiled in advance. Cook to 105°C/220°F then cool to 70°C/160°F. Add the Peruvian cocoa powder, butter and salt, then add the remaining milk (B). Blend and strain.
Chantilly cocoa nibs from Peru

ingredients
100g cream (Bulla Pure35% or others )
5g sugar
22g cocoa nibs (from Peru or Callebaut cocoa nibs)
Equipment:
Stick blender
Method
Heat the cream with the sugar and Peruvian cocoa nibs to 60°C/140°F.
Mix with a hand mixer and let it infuse for 3 hours. Strain. Whisk and garnish with 20g per serving.
Black frosting
ingredients
113g milk
232g cream
77g glucose
227g sugar (#1)
20g cornstarch
96g cocoa powder (Callebaut)
72g sugar (#2)
78g gelatin mass
Method
Heat the milk, cream, glucose, and sugar together. Add the cornstarch mixture, cocoa, and sugar a little at a time.
Boil for 2 minutes and then cool to 40°C/104°F. Add in the melted gelatine, mix and strain.
Chocolate gavottes
ingredients
312g water
30g unsalted butter
52g icing sugar
16g T55 flour
4g starch
20g cocoa powder (Callebaut)
70g egg whites
2g sea salt
6g (per plate) cocoa nibs (Callebaut cocoa nibs or from Peru)
Method
In a saucepan, boil the water and butter, add the icing sugar mixture, cocoa powder, flour, cornstarch and egg whites.
Pour 350g onto a 40 x 60cm pan and sprinkle with Peruvian cocoa nibs.
Bake at 170°C / 340°F in a convection oven for 4 minutes then sprinkle with dried sea salt. Finish cooking (170°C / 340°F for 10 minutes) and break up the gavottes and return to the oven to fold over.
